Sunday Dinner on Monday
Looks like I missed another week for posting on Sunday...
Suggested menu: Maple pork roast, butternut squash**, cornbread, swiss chard
Maple Pork Roast
1 1/2 pounds pork roast, trimmed (I've found that a club roast is best.)
1/2 cup maple syrup
3 Tbsp dijon mustard
1/4 cup sherry vinegar (spanish is really the best sort)
3/4 tsp black pepper
Pre-heat oven to 350
Prepare pork roast - trim extra fat and and silver skin, poke holes with a sharp knife
Salt and pepper roast, place in shallow pan
Mix remaining ingredients well and pour over meat
Roast at 350 degrees, basting occasionally, about an hour
OR until internal temperature reaches 160 degrees
Swiss Chard
1 bunch swiss chard
1 clove garlic (or more to taste)
olive oil
salt & pepper to taste
1 Tbsp sherry vinegar
Rinse chard well
Strip leaves from stem and stack on top of each other
Roll leaves and slice across (you've just done a chiffonade!)
Chop off and discard woodiest part of stem, chop remaining fairly finely
Add oil to warm skillet pan (on med heat)
Mince garlic and add to pan
Add vinegar and reduce for a 30 secs
Add chopped stems and cook until they begin to soften
Add chard, cover
If chard seems dry add a bit of water
Cook for 2 mins and then turn off heat, stir
Place cover back on and allow to steam for another 2-3 mins
Check for done-ness and either return to heat or serve
Sprinkle with a bit of extra vinegar and salt and pepper to taste
